1958 Menu from The Pink Adobe

As far as I know The Pink Adobe in downtown Santa Fe, New Mexico, was the
first place I experienced New Mexican cuisine, and it started a lifelong quest to seek it out any
chance I had. I know The Pink Adobe, along with many other restaurants in Santa Fe, have
made great changes over the years. This menu provides a good insight, though, into the cuisine of
Santa Fe before it became the tourist mecca it is today. Even though The Pink Adobe served
many gourmet dishes (as I think it does today), the enchiladas were of prime interest to me
when I ate there not long after this menu was printed.
This menu was kept as a souvenir by my aunt and uncle who visited The Pink Adobe in
1958.
